Diploma in Dairy Technology


Introduction


Dairy technology involves handling, processing and preservation of milk and its products. This course is designed to impart skills in the application of biological, chemical, biochemical, physical and engineering sciences in processing and preservation of milk and milk products.; the course takes a practical based approach to the activities from raw milk reception to delivery of the packaged milk product at the retail shop. Due to the current job scarcity, the course includes subjects that are not professional, but add to one's entrepreneurship ability.

Justification


The liberalization of the milk based industry in Kenya has greatly attracted entrepreneurship in the dairy industry. While many large milk producers are increasingly turning to processing milk on the farm, there are many entrepreneurs who will depend on out-growers. These entrepreneurs require diploma holders with in-depth knowledge of milk processing.

This course is designed to produce a diploma graduate qualified to work in milk processing industries in production and managerial capacities; to venture into entrepreneurship in the food industry; to teach; and to pursue further education in food related disciplines.

Objectives


The objective of this course is to provide the trainee with sufficient knowledge and skills for a diploma in Dairy Technology.

Admission And Course Requirements


Candidates shall meet Egerton University Diploma general admission criteria. In addition to meeting the prevailing minimum University Diploma requirements, the candidate must have scored a minimum of C- in any three of the following subjects; physics, chemistry, physical science and biological science.

Course Duration
The course duration shall be three years, each consisting of two semesters of fifteen teaching weeks.

Course Coding
Coding of Dairy Technology diploma courses offered by the Dairy and Food Science and Technology Department is represented by DAST followed by a four digit figure. The first digit all being 0, indicates it is a diploma course. The second digit represents the year in which the course is offered to diploma students. The third digit represents the nature of the course within the code discipline, thus;

0-Introductory,

1-Microbiology,

2-Chemistry,

3-Engineering,

4- Food Commodity Technology,

5- Dairy Commodity Technology,

6- Management,

7- Attachment and

8 - Research.

The fourth digit represents the serial number of the course within that discipline.

Examinations
The Egerton University rules and regulations will apply. For each course a minimum of two continuous assessment test (C.A.T) exams with an assignment options will be given. The maximum marks for the CATs will be 30% with 70% for the Final Examination. Where the course has a practical component a maximum of 15% marks will be allocated for it, a maximum of 15% marks for the CATs and 70% for the Final Examination.
